Ingredients for Vegetable pulao recipes
- Basmati rice: 2 cups
- Oil and ghee (mixed): ¼ cup
- Onions: 2 (finely diced)
- Vegetables: 2 cups (carrot, beans, cauliflower and peas cut into small pieces)
- Tomatoes: 2
- Cloves: 3
- Garlic: 2-3
- Ginger: small piece
- Cinnamon stick: ¼
- Coriander leaves: 1 bunch
- Green chilly: 1
- Cup grated coconut: ¼
Method of preparation for Vegetable pulao recipes:
Soak the rice in cold water for about 30 minutes. Set it aside. Grind all the ingredients to form gravy take the combined oil and ghee in a pan. To this add diced onions and fry till they turn golden brown. Later add the gravy and mix well for 2 minutes. Now add the vegetables and make sure they are coated with the gravy. Stir well. After 2 minutes add the rice to the gravy and mix well.
Finally add water (2 cups or water for 1 cup of rice) and salt. After it comes to the boil put a lid on. Allow it to cook on low heat till the rice is done. Some coriander leaves and cashew nuts can be used for garnishing.
Serve hot.
