Ingredients for Summer Vegetable Spaghetti Recipes
- Salt: ¼ tsp
- Small yellow onions: 2 cups (chopped)
- Black pepper to taste
- Ripe tomatoes: 2 cups (peeled and chopped)
- Tomato paste: 1 can
- Yellow and green squash: 2 cups (thinly sliced)
- Uncooked spaghetti: 1 lb
- Fresh green beans: 1-½ cups (cut)
- Parmesan cheese: ½ cup (grated)
- Water: 2/3 cup
- Fresh parsley: 2 tbsp (minced)
- Chili powder: ½ tsp
Method of preparation for Summer Vegetable Spaghetti Recipes:
In a large saucepan, combine onions, tomatoes, squashes, beans, parsley, chili powder, salt and pepper in water and cook for 10 minutes. Then stir in tomato paste and cook for 15 minutes. Stir occasionally until vegetables are tender.
Cook spaghetti in unsalted water according to the package directions. Spoon the vegetable sauce on the spaghetti and sprinkle Parmesan cheese on it. Serve hot.
