Ingredients for Summer squash with fresh herbs recipes
- Water or vegetable broth: 1 cup
- Red onions: 1/3 cup (minced)
- Garlic cloves: 2-3 (minced)
- Fresh tomatoes: 2 cups (diced)
- Zucchini: 2 cups (sliced)
- Red bell pepper: ½ cup (chopped)
- Fresh oregano: ½ tsp (minced)
- Fresh basil: 1 tbsp (minced)
Method of preparation for Summer squash with fresh herbs recipes:
In a skillet take water or vegetable broth and heat it. Add onion and sauté. Keep stirring continuously. Add garlic, tomatoes, zucchini and red bell pepper. Cover and cook until zucchini is soft. Then add oregano and basil. Cook uncovered for 5 minutes. Serve warm or cold.
