Ingredients for Spinach Caesar With Pine Nuts Recipes
- Baby spinach: 8 cups
- Light mayonnaise: 3 tbsp
- Bacon: 4 slices (crisply cooked and crumbled)
- Fresh lemon juice: 2 tbsp
- Toasted pine nuts: ½ cup
- Dijon mustard and anchovy paste: 2 tsp
- Garlic cloves: 2 (minced)
- Salt, pepper, and Worcestershire sauce: ½ tsp (each)
- Olive oil: 3 tbsp
- Parmesan cheese: 1/3 cup (freshly grated)
Method of preparation for Spinach Caesar With Pine Nuts Recipes:
Whisk together mayonnaise, lemon juice, Dijon mustard, anchovy paste, garlic, salt, pepper and Worcestershire sauce. Gradually whisk in sauce and stir in cheese.
In a large bowl, toss spinach with half the bacon and half the pine nuts. Toss with enough dressing to coat spinach. Sprinkle with remaining bacon and pine nuts and serve.
