Ingredients for Pumpkin and muffin meal recipes
- Solid packed pumpkin: ½ cup (canned)
- Small ripe banana: 1
- Milk: ½ cup
- Granulated brown sugar: 1 tbsp
- Pumpkin pie spice: ½ tsp
- Salt: ¼ tsp
- Large egg yolk: 1
- Raisins: 2 tbsp
Method of preparation for Pumpkin and muffin meal recipes:
Preheat oven to 300 degrees F. lightly spray 5 cups of a standard muffin tin with cooking spray. Fill the 6th cup with a little water. In a food processor or blender combine all the ingredients till it becomes a smooth mixture. Stir in the raisins and spoon the mixture into the 5 prepared muffin cups. Bake for 45 minutes. Unfold and serve when it is cool enough. Or refrigerate it and serve after a week.
Serve hot with coconut chutney, Sambar or tomato chutney.
