- Salmon fillets: 6 oz
- Butter: 2 0z
- Fresh herbs: 2 tbsp (chopped) (chives, tarragon and parsley)
- New potatoes and lemon wedges to serve

Take salmon fillets in a bowl, and season them with salt and pepper. Heat 25 grams of butter in a non-stick pan and fry the salmon fillets. Fry for about 5 minutes. Then turn over and continue to cook for 3-4 minutes until the salmon feels firm to the touch. Remove the salmon and keep warm.
Add remaining butter and fry the herbs. Fry until bubbling and pour on salmon fillets. Garnish with potatoes and lemon wedges and serve hot.
