Ingredients for Lentil Vegetable Pilaf Recipes
- Carrots: 1 cup (diced)
- Turmeric: ½ tsp
- Garlic clove: 1 (minced)
- Canned vegetable broth: 3 cups
- Lentils: 1 cup
- Ingredients for lentil vegetable pilaf recipe:
- Cherry tomatoes: 1 cup (quartered)
- Plain non-fat yogurt: ¼ cup
Method of preparation for Lentil Vegetable Pilaf Recipes:
In a medium saucepan, combine vegetable broth, lentils, garlic and turmeric. Bring to a boil over high heat. Cover, reduce heat to low and cook for another 25 minutes. Add carrots and simmer for 5 minutes. Then add cherry tomatoes and cook for 5 minutes until they are softened and carrots are tender. Remove from heat and drain broth. Stir in yogurt and serve hot.
