Ingredients for Jambalaya Recipes
- Red kidney beans: 1 can (300 grams) (drained and rinsed)
- Quick cooking brown rice: 1 cup
- Frozen broccoli: 1 packet (250 grams)
- Yellow bean and capsicum mix
- Canola oil: 1 tbsp
- Onion: 1 (chopped)
- Cajun spice mix: 1 tsp
- Tomatoes and herbs: 1 can (425 grams)
Method of preparation for Jambalaya Recipes:
Cook the rice according to the directions and set aside. Meanwhile microwave all the vegetables until they become tender and set aside. In a large saucepan, heat the oil and stir-fry onions and spice mix over a high heat for 2 minutes. Add the steamed vegetables, tomatoes and kidney beans and bring the mixture to a boil. Reduce the heat slightly and cook until the liquid reduces and thickens. (3 minutes). Stir in the rice and cook thoroughly. (5 minutes). Serve hot.
