Beef Meatballs recipe

Ingredients

32 ounces (2 pounds) ground beef
2 eggs
1 small minced onion
½ cup milk
1 cup cracker crumbs
A pinch of salt (or more, according to your taste)
4 tablespoons olive oil (if you are cooking on a skillet)

For sauce
1 ½ cups ketchup
¼ cup prepared yellow mustard
½ cup distilled white vinegar
¾ cup brown sugar

Instructions

Preheat an oven to 350 degrees F (175 degrees C). You can also cook the meatballs in a skillet, but you can heat the skillet later.
Beat eggs in a large bowl. Add the onion, beef, milk and salt and mix well.
Sprinkle the cracker crumbs and mix until they are evenly distributed.
Form around 40 meatballs with the mixture. Set aside in a baking dish if you are using an oven.
For the sauce, whisk together the ketchup, mustard, white vinegar and brown sugar in a bowl. Pour the sauce over the meatballs.
Put the meatballs in the oven and cook for an hour, until the meat balls are no longer pink in the middle.
If you are cooking in a skillet, heat oil and cook the meatballs. Roll them once in a while so that they are cooked evenly on all sides.

Lamb Meatball recipe

Ingredients

32 ounces (2 pounds) ground lamb

1 egg, lightly beaten
5 shallots, minced
1 cup fresh bread crumbs
1/4 cup chopped fresh parsley
2 tablespoons lemon zest
1/2 teaspoon dried marjoram
1/2 cup unsalted butter
1 tablespoon olive oil
2 1/2 tablespoons tomato sauce
1/4 cup wine
1 small garlic clove, minced
1 dash ground cinnamon
Salt and freshly ground black pepper to taste

Instructions

Melt 1 tablespoon of butter in a skillet over medium heat. Cook and stir the shallots until tender. Transfer to a large bowl.
Mix lamb, bread crumbs, parsley, egg, and lemon zest into the bowl with the shallots. Sprinkle marjoram, salt, and pepper. Store for 1 hour in the refrigerator.
Roll the lamb mixture into small meatballs.
Melt 1/2 cup butter and heat olive oil in a skillet over medium-high heat. Cook in the skillet in batches until evenly brown.
Do not drain skillet. Drain meatballs on paper towels, and place in a serving dish.
Mix tomato sauce, wine, garlic, and cinnamon into the skillet. Cook and stir until well blended and heated through. Drizzle over the meatballs in the dish. Serve with toothpicks.

  • 2 cups carrots, grated

  • 2 tablespoons walnuts, chopped
  • 2 tablespoons wheat germ, toasted

Instructions

  • The oven should be pre-heated to about 375 degrees Fahrenheit (190 degrees Celcius). Oil 18 muffin cups lightly. You an also coat them with cooking spray.
  • Whisk eggs, egg whites, apple butter, oil and vanilla extract in a medium sized bowl.
  • Now, in a large bowl, mix together the different flours, baking powder, baking soda, cinnamon, sugar and salt. After mixing, stir in the apples, carrots and raisins.
  • Then, stir in the eggs, apple butter and vanilla mixture into the flour mixture.
  • Pour the batter into the 18 oiled muffin cups, until they are three quarters full.
  • Combine walnuts and wheat germ and sprinkle over the batter filled muffin cups.
  • Bake in the oven for about 15 – 20 minutes. The tops of the muffins should be golden and spongy.

Diabetic Dessert Pie Recipe

Ingredients

  • 1 prepared cracker crust, 9 inches
  • 1 ounce sugar-free instant vanilla pudding mix
  • 1 cup cold milk
  • 8 ounces crushed pineapple, drained
  • 8 ounces frozen whipped topping, thawed
  • 1 cup chopped pecans

Instructions

  • In a medium sized bowl, whisk the pudding mix and milk together.

  • 4 egg whites
  • 1/4 cup egg substitute
  • ½ cup shredded Cheddar cheese, divided
  • 1 tablespoon butter or stick margarine
  • ¼ cup chopped green pepper
  • ¼ teaspoon dried oregano
  • 1/8 teaspoon pepper
  • ¼ cup water
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon salt

Instructions

  • Take a large nonstick skillet and add butter to it. Saute onion and green pepper until tender.
  • Add the tomato, zucchini, oregano and pepper. Cook and stir for 5-8 minutes, until the liquid is nearly evaporated. Set aside and keep warm.
  • In a mixing bowl, beat egg whites, cream of tartar, water and salt until stiff peaks form. Place egg substitute in another bowl. Fold in the egg white mixture.
  • Coat a ten inch oven proof skillet with cooking spray. Pour the mixture in it.
  • Cook it over medium heat for 5 minutes or until bottom is lightly browned.
  • Bake at 350 degrees Fahrenheit for 9-10 minutes.
  • Take the vegetables onto one side with a spoon. Sprinkle half of the cheese over it.
  • Score the middle of omelet with a sharp knife. Fold omelet over the filling.
  • Transfer the omelet to a warm platter. Sprinkle it with remaining cheese. Cut it in half and serve.

Oven Omelet Recipe

Ingredients

  • 8 eggs
  • 1 cup milk
  • 2 cups hash brown potatoes, shredded
  • 1 cup cooked ham, diced
  • 1 cup Cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8×8 inch glass baking dish.

Chinese Style Vegetable Spring Roll

Ingredients

  • 1/3rd of green cabbage, chapped finely
  • 2/3 cup fresh bean sprouts
  • ½ cup sliced snow peas
  • ¾ cup thinly sliced shiitake or portabello mushrooms
  • 3 chopped scallions
  • 2 grated carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • One bunch fresh mint
  • Spring roll wrappers
  • Water

Instructions

Except for wrappers and water, mix all ingredients in a large mixing bowl. Stir well to coat the veggies with soy sauce and sesame oil.
Submerge spring roll wrappers in water until pliable one at a time. Place 2 to 3 tablespoons of the mix in each wrapper. Place two or three mint leaves on the top and wrap your spring rolls. Serve with a dipping sauce.

  • 5 tablespoons olive oil
  • Black pepper and salt to taste

Instructions

  • Grill or broil the chicken. Cut the cooked chicken into cubes.
  • Boil a pot of lightly salted water and 1 tablespoon of olive oil. Add the spaghetti and cook for 8 – 10 minutes, until al dente (you will find instructions on the package).
  • Drain the spaghetti well.
  • Press the garlic and process with olive oil. Toss the spaghetti with chicken, broccoli and garlic.

Lentil Spaghetti

Serves 4

Ingredients

  • ¼ cup dried brown lentils, rinsed and drained
  • 15 ounces stewed tomatoes
  • One 15 ounce can artichokes in water
  • ¼ pounds thin spaghetti
  • 4 chopped green onions
  • ½ teaspoon sesame seeds
  • 3 tablespoons olive oil
  • ¼ teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  • In a large saucepan, place the lentils, tomatoes, artichokes with water, half the cayenne pepper and ¼ cup water.
  • Boil the ingredients in the sauce pan. Then bring the heat to a simmer. Keep it at simmer for 20 minutes.
  • Boil a pot of lightly salted water and 1 tablespoon of olive oil. Add the spaghetti for 8 – 10 minutes, until al dente (you will find instructions on the package). Drain and return to pot.
  • Cover to keep it warm.
  • Heat 2 tablespoons olive oil in a skillet. Over a medium heat, cook the green onions for 3 minutes. Add the remaining cayenne pepper and sesame seeds. Cook for about 2 minutes, until sesame seeds are light brown.
  • Add the lentils, tomatoes, artichokes mixture to the spaghetti and toss to distribute evenly. Then add the green onion and toss again.
  • Season with salt and pepper.

Coca Cola Cake

Ingredients

  • 2 cups all-purpose flour
  • ½ cup buttermilk

  • 1 teaspoon baking soda
  • 2 eggs
  • 1 cup coca cola
  • 1 ½ cups miniature marshmallows

  • Mix all ingredients except coca cola and marshmallows in a large bowl.
  • Blend at low speed, and then mix for 1 minute at medium speed.
  • Add cola. Blend well.
  • By hand, stir in marshmallows. Pour batter into a greased 9×13-inch pan.
  • Bake at 350 degrees for 40-45 minutes.
  • Cool for 30 minutes then spread with Cola Icing.

Ingredients

  • ½ cup soft butter
  • 3 Tablespoons cocoa
  • 1/3 cup cola
  • 4 cups powdered sugar
  • 1 cup chopped, toasted pecan or walnuts

Coffee Mocktail

You can use this to wake yourself up.

Ingredients

4 ounces coffee
2 ounces cream
¼ ounces chocolate syrup
¼ cinnamon
Some ice

Instructions

Put all the ingredients into a cocktail shaker(or put them in a blender if you don’t have a shaker).
Shake well.
Pour the liquid into an old fashioned glass.
If you want to decorate the drink, you can whip some cream onto the top and add some chocolate.

Tutti –Frutti Smoothie

Ingredients

½ cup strawberries
½ cup pineapples
½ cup sliced banana
½ cup plain yogurt
½ cup orange juice
Some ice

Instructions

Pour all the ingredients in a blender and blend for two minutes.

Strawberry Julius

Ingredients

1 cup strawberries
2 ounces milk

1 scoop of vanilla ice cream
½ cup ice

Pour into a hurricane glass.

4. Double Strawberry

Ingredients:

  • ½ cup fresh strawberries
  • ½ cup straw berry milk
  • 1 cup vanilla yogurt
  • ¾ cup milk
  • Whipped toppings

Process: Except topping blend together all ingredients in blender. Blend them well until they become smooth. Make 2 servings in large glasses. While serving, decorate smoothie with toppings.

5. Strawberry Chocolate

Ingredients:

  • ½ cup chocolate frozen yogurt
  • ¾ cup strawberry yogurt
