<p>Beef Meatballs recipe</p>
<p>Ingredients</p>
<p>32 ounces (2 pounds) ground beef<br />
2 eggs<br />
1 small minced onion<br />
½ cup milk<br />
1 cup cracker crumbs<br />
A pinch of salt (or more, according to your taste)<br />
4 tablespoons olive oil (if you are cooking on a skillet)</p>
<p>For sauce<br />
1 ½ cups ketchup<br />
¼ cup prepared yellow mustard<br />
½ cup distilled white vinegar<br />
¾ cup brown sugar</p>
<p>Instructions</p>
<p>Preheat an oven to 350 degrees F (175 degrees C). You can also cook the meatballs in a skillet, but you can heat the skillet later.<br />
Beat eggs in a large bowl. Add the onion, beef, milk and salt and mix well.<br />
Sprinkle the cracker crumbs and mix until they are evenly distributed.<br />
Form around 40 meatballs with the mixture. Set aside in a baking dish if you are using an oven.<br />
For the sauce, whisk together the ketchup, mustard, white vinegar and brown sugar in a bowl. Pour the sauce over the meatballs.<br />
Put the meatballs in the oven and cook for an hour, until the meat balls are no longer pink in the middle.<br />
If you are cooking in a skillet, heat oil and cook the meatballs. Roll them once in a while so that they are cooked evenly on all sides.</p>
<p>Lamb Meatball recipe</p>
<p>Ingredients</p>
<p>32 ounces (2 pounds) ground lamb</p>
<p>1 egg, lightly beaten<br />
5 shallots, minced<br />
1 cup fresh bread crumbs<br />
1/4 cup chopped fresh parsley<br />
2 tablespoons lemon zest<br />
1/2 teaspoon dried marjoram<br />
1/2 cup unsalted butter<br />
1 tablespoon olive oil<br />
2 1/2 tablespoons tomato sauce<br />
1/4 cup wine<br />
1 small garlic clove, minced<br />
1 dash ground cinnamon<br />
Salt and freshly ground black pepper to taste</p>
<p>Instructions</p>
<p>Melt 1 tablespoon of butter in a skillet over medium heat. Cook and stir the shallots until tender. Transfer to a large bowl.<br />
Mix lamb, bread crumbs, parsley, egg, and lemon zest into the bowl with the shallots. Sprinkle marjoram, salt, and pepper. Store for 1 hour in the refrigerator.<br />
Roll the lamb mixture into small meatballs.<br />
Melt 1/2 cup butter and heat olive oil in a skillet over medium-high heat. Cook in the skillet in batches until evenly brown.<br />
Do not drain skillet. Drain meatballs on paper towels, and place in a serving dish.<br />
Mix tomato sauce, wine, garlic, and cinnamon into the skillet. Cook and stir until well blended and heated through. Drizzle over the meatballs in the dish. Serve with toothpicks.</p>

Diabetic Breakfast Muffin Recipe</strong></p>
<p><strong><em>Ingredients</em></strong></p>

<li>1 ½ cups all-purpose flour</li>
<li>½ cup whole wheat flour</li>
<li>1 ¼ cups white sugar</li>
<li>1 tablespoon ground cinnamon</li>
<li>2 teaspoons baking powder</li>
<li>½ teaspoon baking soda</li>
<li>2 cups carrots, grated</li>
<li>1 apple, peeled, cored, and chopped</li>
<li>1 cup raisins</li>
<li>1 egg</li>
<li>2 egg whites</li>
<li>½ cup apple butter</li>
<li>1 tablespoon vanilla extract</li>
<li>2 tablespoons walnuts, chopped</li>
<li>2 tablespoons wheat germ, toasted</li>
<li>¼ cup vegetable oil</li>
<li>½ teaspoon salt</li>

<p><strong><em>Instructions</em></strong></p>
<ul>
<li>The oven should be pre-heated to about 375 degrees Fahrenheit (190 degrees Celcius). Oil 18 muffin cups lightly. You an also coat them with cooking spray. </li>
<li>Whisk eggs, egg whites, apple butter, oil and vanilla extract in a medium sized bowl.</li>
<li>Now, in a large bowl, mix together the different flours, baking powder, baking soda, cinnamon, sugar and salt. After mixing, stir in the apples, carrots and raisins.</li>
<li>Then, stir in the eggs, apple butter and vanilla mixture into the flour mixture.</li>
<li>Pour the batter into the 18 oiled muffin cups, until they are three quarters full.</li>
<li>Combine walnuts and wheat germ and sprinkle over the batter filled muffin cups.</li>
<li>Bake in the oven for about 15 – 20 minutes. The tops of the muffins should be golden and spongy.</li>

<li>½ cup shredded Cheddar cheese, divided</li>
<li>1 tablespoon butter or stick margarine</li>

<li>¼ teaspoon dried oregano</li>
<li>1/8 teaspoon pepper</li>
<li>¼ cup water</li>
<li>¼ teaspoon cream of tartar</li>
<li>¼ teaspoon salt</li>

<p><strong>Instructions</strong></p>
<ul>
<li>Take a large nonstick skillet and add butter to it. Saute onion and green pepper until tender.</li>
<li>Add the tomato, zucchini, oregano and pepper. Cook and stir for 5-8 minutes, until the liquid is nearly evaporated. Set aside and keep warm.</li>
<li>In a mixing bowl, beat egg whites, cream of tartar, water and salt until stiff peaks form. Place egg substitute in another bowl. Fold in the egg white mixture. </li>
<li>Coat a ten inch oven proof skillet with cooking spray.  Pour the mixture in it.</li>
<li>Cook it over medium heat for 5 minutes or until bottom is lightly browned.</li>
<li>Bake at 350 degrees Fahrenheit for 9-10 minutes.</li>
<li>Take the vegetables onto one side with a spoon. Sprinkle half of the cheese over it.</li>
<li>Score the middle of omelet with a sharp knife. Fold omelet over the filling.</li>
<li>Transfer the omelet to a warm platter. Sprinkle it with remaining cheese. Cut it in half and serve. </li>

<li>One 15 ounce can artichokes in water</li>
<li>¼ pounds thin spaghetti</li>
<li>4 chopped green onions</li>
<li>½ teaspoon sesame seeds</li>
<li>3 tablespoons olive oil</li>
<li>¼ teaspoon cayenne pepper</li>
<li>Salt and pepper to taste</li>
</ul>
<p><strong><em>Instructions</em></strong></p>

<li>In a large saucepan, place the lentils, tomatoes, artichokes with water, half the cayenne pepper and ¼ cup water.</li>
<li>Boil the ingredients in the sauce pan. Then bring the heat to a simmer. Keep it at simmer for 20 minutes.</li>
<li>Boil a pot of lightly salted water and 1 tablespoon of olive oil. Add the spaghetti for 8 – 10 minutes, until al dente (you will find instructions on the package). Drain and return to pot. </li>
<li>Cover to keep it warm.</li>
<li>Heat 2 tablespoons olive oil in a skillet. Over a medium heat, cook the green onions for 3 minutes. Add the remaining cayenne pepper and sesame seeds. Cook for about 2 minutes, until sesame seeds are light brown.</li>
<li>Add the lentils, tomatoes, artichokes mixture to the spaghetti and toss to distribute evenly. Then add the green onion and toss again.</li>

But you may not be feeling like putting in all that effort to make a sweet dish. Here are two easy picnic dessert recipes which taste great.</p>
<p><strong>Sweet Berry Blast Dessert</strong><br />

<em>Ingredients</em></strong></p>
<ul>
<li>1 ½ cup strawberries</li>
<li>1 cup raspberries</li>
<li>1 cup blueberries</li>
<li>1 teaspoon vanilla extract</li>
<li>4 teaspoons sugar</li>
</ul>
<p><strong>Instructions</strong></p>
<ul>
<li>Wash all the fruits. Cut the strawberries.</li>
<li>In a bowl, mix vanilla extract and sugar.</li>
<li>Add the fruit and toss. All the fruit should be covered with vanilla and sugar.</li>
</ul>
<p>You can use more or less sugar depending on your taste. You can also use brown sugar.</p>
<p><strong>Coca Cola Cake</strong><br />

<li>2 cups all-purpose flour</li>
<li>½ cup buttermilk</li>
<li>1 cup unsalted butter</li>
<li>1 teaspoon vanilla</li>
<li>1 ¾ cups granulated sugar</li>
<li>3 tablespoons cocoa</li>
<li>1 teaspoon baking soda</li>
<li>2 eggs</li>
<li>1 cup coca cola</li>
<li>1 ½ cups miniature marshmallows</li>

<p><strong><em>Instructions</em></strong></p>
<ul>
<li>Mix all ingredients except coca cola and marshmallows in a large bowl.</li>
<li>Blend at low speed, and then mix for 1 minute at medium speed.</li>
<li>Add cola. Blend well.</li>
<li>By hand, stir in marshmallows. Pour batter into a greased 9&#215;13-inch pan.</li>
<li>Bake at 350 degrees for 40-45 minutes.</li>
<li>Cool for 30 minutes then spread with Cola Icing.</li>

<li>½ cup soft butter</li>

<li>Mix all the ingredients except the nuts and beat until smooth.</li>

<p>3 ounces tomato juice<br />
½ ounce lemon juice<br />
Celery salt<br />
Worcestershire sauce<br />
Tabasco sauce<br />
Ground pepper<br />
Celery stalk for garnish</p>
<p><strong><em>Instructions</em></strong></p>
<p>Put ice cubes into a highball glass. Pour the liquid ingredients in the same order as given above.<br />
Mix them all really well.<br />
Add the salt and pepper according to taste.<br />

<p>Put the pineapple juice, milk, cream, sugar and ice cubes in a blender.<br />

Pour the liquid into a hurricane glass. Garnish with orange slice.</p>

2 ounces cream<br />

Garnish with strawberry pieces.<br />
If the drink is too thin or too thick, add more ice cream or water respectively.</p>

<li>1 cup sliced fresh or frozen strawberries</li>
<li>½ cup mango, cubed</li>
<li>¼ cup orange juice</li>
<li>Ice cube according to need</li>
<li>1 tsp. honey ( optional)

<p><strong>Process:  </strong>Place all ingredients in blender and blend them together. 12 ounce of smoothie will be prepared.</p>

<li>4 fresh sliced strawberries</li>
<li>1 tsp. sugar</li>

<li>Ice cubes according to need</li>

<p><strong>Process: </strong>Place all ingredients in blender and blend them together. 12 ounce of smoothie will be prepared.</p>
<p><strong>3. Strawberry Frost:</strong></p>
<p><strong>Ingredients:</strong></p>

<li>1 can of sweetened condensed milk</li>
<li>1 container plain yogurt</li>
<li>6 frozen strawberry juices (concentrate)</li>
<li>Ice cubes</li>
</ul>
<p><strong>Process: </strong>In blender container add condensed milk, yogurt and strawberry juice. Blend them properly. Keep the blender running and add ice cubes. Blend mixture until it becomes smooth. 4 serving can be made from this mixture.</p>
<p><strong>4. Double Strawberry</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>½ cup fresh strawberries</li>
<li>½ cup straw berry milk</li>
<li>1 cup vanilla yogurt</li>
<li>¾ cup milk</li>
<li>Whipped toppings</li>
</ul>
<p><strong>Process:  </strong>Except topping blend together all ingredients in blender. Blend them well until they become smooth. Make 2 servings in large glasses. While serving, decorate smoothie with toppings.</p>

<li>½ cup chocolate frozen yogurt</li>
<li>¾ cup strawberry yogurt</li>

<li>¾ cup whole milk

<li>1teaspoon salt

<li>1 egg
</li>
<li>1 teaspoon vanilla extract

<li>11/2 cup grated carrot

<li>½ cup raisins

<p><strong>Process: </strong>First mix spice, baking powder, baking soda and salt in one bowl. In another bowl mix pumpkin, egg, milk and vanilla extract. Combine the two extracts and add in carrots and raisins to it. Now bake this batter for at least 35 minutes until top gets firm.</p>

<li>Toasted coconut

<li>Sliced fresh fruit

<p><strong>Process: </strong>First preheat oven at 350deg. And coat a loaf pan with cooking spray. Combine salt, baking powder, soda and cinnamon and reserve it. Now beat banana, sugar and egg together at medium-high speed. And on medium-low speed beat reserve mixture with1/3 cup milk until they combine. Now add pineapple to it. Transfer it to pan and bake for 45 minutes until toothpick comes out clean. Cool it for 10 minutes and garnish with fruit and coconut
