Ingredients for Chicken and apricot recipes
- Sugar free apricot preserves: 1 ¼ tbsp
- Lime rind (grated)
- Fresh limejuice: ¾ tbsp
- Fresh ginger: ½ tbsp (grated)
- Skinless, boneless chicken breasts: ½ pound
Method of preparation for Chicken and apricot recipes:
Combine apricot preserves, lime rind, limejuice and ginger in a small bowl. Bring grill up to medium heat. Place the chicken on the grill and apply the mixture. Close the lid on the grill and cook for 6 minutes. Flip chicken and apply the remaining half of the mixture. Grill for another 6 minutes or until done. Serve hot.
