Ingredients for Artichoke couscous recipes
- Vegetable broth: 4 cups
- Couscous: 2 cups
- Tomatoes: 2 (diced)
- Pickled artichoke hearts: 3 (chopped)
- Feta cheese: ½ cup (crumbled)
- Pine nuts: ½ cup
- Scallions: 3 (shopped)
- Fresh garlic cloves: 4 (chopped)
- Dried basil: 4 tbsp
- Dried parsley: 2 tbsp
- Olive oil: 4 tbsp
- Salt to taste
- Pepper to taste
Method of preparation for Artichoke couscous recipes:
Bring the vegetable broth to a boil, add couscous, stir and immediately remove from heat. Keep it aside for 5 minutes and then fluff it with fork. Allow it to cool. Meanwhile, chop all the ingredients. Take the couscous into a large bowl and add all the chopped ingredients. Toss them well and serve.
