Rajasthani Recipe: Dahi Vada

Ingredients for Dahi Vada

For black Gram vada

  • Black Gram – 2 glass
  • Big Onion (chopped) – 1
  • Green Chillies – 2
  • Pepper – 1 tsp
  • Chopped ginger – 1 tsp
  • curry leaves – 1 tsp
  • Soda powder – ¼ tsp
  • Salt – 1 tsp
  • Oil (for deep fry) – 2 cups
  • For making Dahi vada.

  • Black Gram vada (medium size) – 10
  • Curd – 500 grams
  • Sugar – 2 tsp
  • Salt to taste
  • Hot spice (Roasted & powder cardamom, cinnamon, cloves, cumin, coriander, nutmeg, black pepper) – 1/2 tsp
  • Cumin Powder ( roasted ) – 1 tsp
  • Red Chilly powder -1 tsp
  • Tamarind sauce – 1 cup
  • Coriander Leaves (finely chopped) – a few
  • Preparation Method for Dahi Vada

    For black Gram vada

  • First soak black gram in water for 5 hours.
  • After 5 hours remove the gram from water and grind it in grinder by adding ¼ cup of water and salt. (make sure that the paste should be in rough)
  • Now add all ingredients (onions, green chillies, pepper, curry leaves, soda powder, and ginger) to the ground gram and mix it properly.
  • Pat your hands with water
  • Prepare balls off the paste and press it with your hands like patties.
  • Now make a hole in between the black gram vada patties.
  • Now heat 2 cups of oil in a pan and deep fry all together till it becomes golden brown.
  • After getting brown, remove from oil and place it in a plate till it becomes cool.
  • For making Dahi vada.

  • Soak black gram vada for 4 to 5 hours.
  • Before serving squeeze out the water and put it in a serving plate.
  • Now beat the curd with sugar and pour over vadas. Also pour tamarind sauce and add all spices( hot spices, cumin
    powder and chilly powder) to taste.
  • Finally garnish with chopped coriander and serve it.
