North Indian recipe: Cashew Rice

Ingredients for Cashew Rice

  • Rice – 2 cups
  • Cashew nuts ( roasted and powdered ) – 3 tsp
  • Salt to taste
  • Grated coconut (dry) – 2 tsp
  • Turmeric powder – a pinch
  • Asafoetida – a pinch
  • Mustard seeds – 1/4 tsp.
  • Red chillies – 2
  • Oil – 2 tbsps.
  • Few coriander leaves
  • Preparation Method for Cashew Rice

  • First cook rice and keep aside.
  • After heating oil in the pan and add mustard seeds,asafoetida, and red chillies.
  • Now add cooked rice and the remaining ingredients and mix well.
  • Finally garnish with chopped coriander and serve with curd.
