Indian Recipe : Cabbage soup

Ingredients for Cabbage Soup
The following are the ingredients for cabbage soup
For the stock

  • Cabbage – 225 grams
  • White pumpkin – 225 grams
  • Onions – 2
  • Potatoes – 2
  • For the topping

  • Onion( finely chopped) – 1
  • Carrot (finely chopped )– 1
  • Cabbage (finely chopped) – ½ teacup
  • Butter – 1 tsp
  • Salt
  • Pepper
  • For the white sauce

  • Butter – 1 ½ tsp
  • Plain flour – 1 ½ tsp
  • Milk – 1 ½ teacups
  • Pepper and salt to taste
  • Preparation Method for the Cabbage Soup
    The following is the preparation method for the cabbage soup
    For the stock are:

  • First cut the vegetables in big pieces .
  • Add the vegetables in 7 teacups of water and cook them in a pressure cooker.
  • After cooking, drain the excess water through a sieve and use it as stock.
  • For white sauce

  • First heat the butter in a vessel.
  • After heating add the flour and cook for 2 minutes and keep stirring it throughout to prevent the mix from getting burnt.
  • Switch off the gas and add the milk gradually.
  • Mix until well blended.
  • Turn the gas on again and cook slowly until the sauce thickens.
  • Add pepper and salt and mix it well.
  • How to proceed

  • Heat the butter in a pan and cook the vegetables for 3 to 4 minutes
  • Add stock and cook for 20 minutes.
  • Add the salt, pepper and white sauce.
  • It is ready to be served.
